This is a great way to use up any leftover Christmas turkey from your Christmas dinner, with both fragrant and spicy notes to elevate this dish.
Preheat oven to 200°C fan assisted or 220°C without a fan (gas 7). Place potatoes, onions, garlic, schmaltz and madras paste in a roasting tray, mix well then season with salt. Roast for 20 minutes or until the onions are tender and potatoes golden brown. At this stage add the shredded turkey mixed with a little gravy then pop back in the oven for 5 minutes until thoroughly hot. To finish, add a good squeeze of lime juice and lots of fresh coriander.
