Exclusive to Farmison & Co, this classic Beef Wellington will make for a generous meal for four. Made to the original recipe with Madeira-infused Mushroom duxelles, then wrapped in air dried ham and finally a layer of our all-butter flaky puff pastry, not forgetting the all-important meltingly tender aged centre cut fillet of Beef. Be sure to consult our Beef Wellington recipe below, and serve alongside our F&Co red wine sauce and speciality Dauphinois potatoes.

Well done on the boozy duxelles, which is delightfully seasoned and full of Madeira - it complements the beef and ham so very, very well."

An outstanding joint of prime grass fed beef, trimmed of all sinew by hand, the centre cut is one piece of pure fillet. The underworked fillet muscle of the beast makes for the most tender beef, often reserved for prime steaks in restaurants. Our centre cuts are further tenderised by the essential aging process, which enhances the natural quality of the beef, concentrating the flavour.

Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
