This is a great way to use up leftover Christmas turkey - simple to produce whilst fragrant and healthy. Add leftover sprouts if you're not fed up with seeing them by now!
Method
Preheat the oven to 200°C fan assisted or 220°C without a fan
(gas 7).
Place the cut sweet potatoes, squash and spring onions into a
large shallow roasting pan and sprinkle with the spices and lime
zest, garlic, salt and the stock.
Drizzle over the chicken schmaltz or olive oil, then bake for
45 minutes or until just cooked, then mix the leftover Christmas
turkey and lime juice into the pan. Carefully toss everything
together then bake for an additional 10 minutes making sure the
turkey has fully heated through.
Finish with picked coriander and a dollop of sour cream.
