With deep flavour characteristic of our beef on the bone, the rich qualities of this beef reflects the grazing of our grass fed cattle on lush pastures in pristine countryside. This is a traditional English cut, once forgotten but coming back into fashion, with the prized rib meat ordinarily reserved for steaks with its rich seam of marbling, providing amazing flavour.
There are primarily 2 ways to cook the short rib cut. However, it is recommended by our chef to slow roast it in order to allow the beef to permeate the smoke and loosen up the tight muscles, allowing that rich melt-in-mouth texture to form.

About the cut
Also known as Thin Ribs, or as sliced Jacob's Ladder, Beef Short Ribs are popular the year round. The rib is one of the prized parts of the beast, offering flavoursome rich cuts of beef, made extra special by the use of pedigree beef breeds. Our Short Ribs are cut in the Flanken style across the bone, giving a cross section of two or more bones, and offers more meat to be held in between the ribs.

It's good to eat and enjoy heritage breed meat from British breeds, showing farmers that there is a market for their herds and flocks and encourage them to rear them. Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
