Our venison haunch is perfect for roasting, boasting lean meat and the deep, gamey flavour that characterises our venison. With eye catching appearance for easy but spectacular entertaining, this lean, red meat is low in fat and makes for delectable seasonal dining. Strictly sourced sustainably from the wild or wild parkland sources, and expertly prepared at our Ripon butchery.

This product is frozen and will defrost whilst in transit to you. Ensure this product is thoroughly defrosted before cooking. We strongly recommend cooking within 24 hours for best quality. This product must not be refrozen.

How to cook Haunch Joint Of Wild Venison

A roasting joint deserving of the top table and a seasonal special not to be missed. Roast on a trivet of onion, carrot, and celeriac, to give the venison aroma and be sure to deglaze the roasting tray for a fragrant gravy. Serve with spiced red cabbage, dauphinoise potatoes, and watercress.

About the cut

Venison Haunch

Wild venison is typically lean with lots of connective tissue, and the haunch is cut from the top of the back legs. This requires skill to cut neatly away from the bone, before trimming the meat and neatly rolling for a spectacular, easy-carve roasting joint.

Experts estimate there have never been so many deer in the UK, and with an absence of natural predators their sheer numbers threaten to overwhelm natural ecosystems. We source our wild venison from The Duke of Argyll Estate in Scotland and the Fountains Abbey Estate, which is just up the road from us in Ripon, North Yorkshire. The Duke of Argyll Estate is one of the wildest and romantic areas of the British Isles, while the Fountains Abbey Estate supplies us with wild parkland venison as their rangers need to control the numbers carefully. We typically stock Red deer, but occasionally receive Sika and Fallow deer.
