Known as Onglet in France, hanger steak is tender and flavoursome, and when properly marinated, it's a wonderful steak to grill or broil. Very much part of a revival of the artisan craft of British steak cutting, the Hanger is an excellent place to start if you're looking to try a new kind of steak, a little out of the ordinary. Sourced from our herds of grass fed cattle, expect natural quality and exquisite eating, while if you need inspiration, be sure to look at our chef-written recipe tips.

"There is a lovely rich meaty smell here, despite the absence of any fat. The level of caramelisation gives depth of flavour to the outside of the meat, while the rare and deeply coloured interior has considerable depth of honest, beefy flavour - impressive for only 14 days ageing. There is real character in this meat, surely a tribute to the care of the farmer and the quality of the pasture."

How to cook beef hanger steak

A steak often looked to by chefs as a flavoursome steak for the specials board, simple to cook, but packed with flavour. Often used in Mexican tacos or fajitas to match the flavours of guacamole and salsa, it's also a traditional British favourite, but sometimes hard to get hold of. Serve with French Fries and blue cheese dressed salad for a refined steak dinner.

About the cut

Hanger Steak

Also known as Onglet in French cuisine, this steak is also a staple of traditional Mexican and Texan steak cutting. The Hanger is similar in texture to the Flank Steak, but more prized and well known for its flavour, making it the first of the non-traditional prime cuts of the beast to be typically sold. That's because there's only two per beast, meaning very limited supply of this cut.

When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
