About the cut
A ballotine is traditionally a de-boned thigh or leg of poultry, and is a staple of French restaurant menus. They are increasingly popular and has become a signature F&Co cut at Christmas. This is because they allow for an even finish when roasting. We stuff all of our turkey ballotines with an aromatic sausagemeat developed in house to enrich the naturally succulent meat.
