We've paired this popular cut with our brand-new luxurious bone marrow butter for the ultimate treat this festive season, allowing you to baste the meat while it roasts in a rich, garlic butter with aromatic notes of Dijon mustard. The fillet is the choice cut in the British Isles, and certainly in the most demand at Christmas when people celebrate in style. The bone marrow and garlic butter flavour infuses the meat as it cooks, adding to the meat's natural tenderness. This is an impressive cut of free-range beef that dinner party guests are sure to love. Serve with roasted parsnips, luxurious dauphinois potatoes and red wine sauce to finish.

To cook, simply season with good quality fine sea salt and cracked black pepper. On a heavy-based frying pan, sear the grass-fed beef on all sides before placing in the centre of the oven and finishing, making sure to baste occasionally in the bone marrow butter. Allow the meat to rest for at least half the cooking time before carving, this allows the grain to relax making for super tender beef. About the cut
An outstanding joint of prime grass fed beef, trimmed of all sinew by hand, the centre cut is one piece of pure fillet. The underworked fillet muscle of the beast makes for the most tender beef, often reserved for prime steaks in restaurants. Our centre cuts are further tenderised by the essential aging process, which enhances the natural quality of the beef, concentrating the flavour.
