This salad was first created in the 1890's at the Waldorf Hotel in New York City. The perfect early spring salad, celery, apples and walnuts are all well in season from October.
Method
Trim away the celery leaves, then de-string by peeling with a
vegetable peeler.
Cut the celery into 5mm slices.
Break the walnuts into 2-4 pieces.
For the dressing put the mayonnaise into a bowl, then stir in
the mustard.
Stir in the cream and lemon juice, then season with salt.
Peel the apples.
Cut the apple flesh away from the core.
Cut the apple into small cubes about 1cm across.
Mix the celery, apple and walnuts in a salad bowl.
Spoon in the dressing and stir well until everything is well
coated. Season the salad with salt and pepper.
