Ingredients

  • 800gram hand chopped rump steak (no sinew )
  • 120gram bone marrow
  • 2 small onions finely diced and softened in butter
  • 80 gram fresh breadcrumb
  • 2tsp Mixed thyme and marjoram leaves
  • Ground black pepper

Introduction

Great with tomato chutney spiked with fresh grated horseradish and skinny fries.

Method

  1. Chop meat till very fine mince
  2. Grate marrow on top add crumbs and seasoning
  3. Add cooled onion
  4. Gently mix together by hand
  5. Sear burgers on each side then transfer to oven 225° c for 5/6 mins
  6. Serve medium rare or according to choice
