Method
Mix the salt and pepper together on a plate and dust the steaks
in the mixture.
Heat the olive oil in a heavy-based frying pan and fry the
steaks for 3 minutes each side turning only once.
Remove the pan from the heat and allow the steaks to rest in
the pan for 5-10minutes.
Meanwhile, pour the oysters and their juices into a hot sauce
pan and poach them for 30 seconds, just so they are lightly
cooked.
Serve with an oyster on top of each steak, with a drop of olive
oil and a squeeze of lemon on each oyster.
