Lay the bones cut side up on a heavy baking tray, if they wont
sit straight nestle them into some rock salt.
Sprinkle lightly with sea salt flakes and roast for 15 minutes
until the marrow is piping hot melting.
Many alternatives work great ranging from a simple parsley
garlic crumb scattered over the marrow pre baking to my favourite,
a mix of diced shallot anchovy, lots of chopped parsley a soft
brioche crumb all seasoned with cracked pepper then baked on top of
the marrow.
