Here is my take on a classic chicken Milanese, sandwiched between slices of soft focaccia with unctuous sweet tomato compote, tangy Parmesan & peppery watercress salad. This makes for a stunning sandwich which is perfect for dining al fresco or sat in front of the tv relaxing.
Method
Air,shallow or deep fry the
Milanese chicken until thoroughly cooked
Warm the tomato compote & bread ready to assemble
Spoon tomato onto the focaccia base, top with the
chicken then toss some rocket with grated parmesan, olive oil
& a little lemon & pile on top
