Simply whisk together the oil, chilli if using, cumin, garlic,
vinegar & season to taste
Next burn the peppers over an open flame until fully burnt all
over
Place in a bowl ice-cold water and rub away skin
Remove from water
Pat dry and remove seeds & stem
Slice into thin strips and mix with the dressing
To cook the sausage take a heavy based non - stick fry pan and
cook turning frequently over a medium heat for 8 to 10 minutes
forming a rich colour and they should be firm to touch
Place the bread in a pre - heated oven 180 oc for 3 to 4
minutes, remove and slice in half through the centre
Slice the sausage lengthways and place onto bread
Cover with dressed peppers and chopped coriander then top with
remaining bread and enjoy!
