For the Sauce: Boil all ingredients together except the Bourbon & reduce to a syrup, pass through a fine sieve. Add Bourbon to taste & reserve.
Finally: Remove steaks from their packaging & the fridge 1 hour before cooking & apply a thin layer of the rub all over the steaks Char the steaks over white-hot burning coals on a BBQ, 3 to 4 minutes each side, move to cool zone to continue cooking if getting too dark. Leave to rest for 5 minutes before serving. Pour over the Bourbon sauce and enjoy
