Christmas leftovers are all part of the festive experience. Getting to enjoy elements of the meal you shared with loved ones, once more is a joy in itself. What's more, we do not like to think of wasting any food. Christmas is a time of celebration and excess, but in 2021 alone it was estimated the UK wasted £485 million on food. It is in some ways understandable. We all stock up for a Christmas cooking and want to make sure there is plenty to go round. The thought of cold turkey the next day though is not always inviting. That said, it doesn't have to be an endless series of cold turkey sandwiches. Our Michelin Starred Chef has some indulgent recipes that might just get you more excited than the feast on the big day itself.
If you want to make the most of your Christmas turkey, this sustainable lens must include the turkey selection. It has to be a properly free-range heritage breed, slow grown, roosting and exhibiting natural behaviours and foraging on lush pasture. Our range of Christmas turkeys fit the bill perfectly. Find a tasty turkey that you will be excited to return to as Christmas leftovers.
Use up all the meat in your Christmas dinner leftovers with this fantastic giblets and gravy recipe. All our whole Christmas birds at Farmison & Co are prepared and sold with giblets. This is key to making the most of your bird, and they can be used to make a wonderful gravy to serve alongside your Christmas feast. Once the turkey has been removed from the roasting tray, pop the roast vegetables to one side then add the giblets and cook over a medium high heat. Once nicely browned, dust with a tablespoon of flour, continue to cook then add the vegetables back to the tray with a litre of poultry stock. Bring to a simmer and reduce to a desired consistency before adding a few sprigs of fresh sage to the gravy. Pass through a fine sieve and keep hot ready to serve.
Read our guide on how to make traditional giblet gravy to enjoy with your leftover Christmas meat. It is one of our favourite Christmas leftover recipes to share as it is quick and easy to do, once the bird has cooked.
