Taken from the forequarter, the chuck is carefully prepared by our master butchers to reveal the chuck eye before being rolled and tied with butchers twine, a joint which is a favourite in the USA for barbecuing & smoking. Sourced from heritage breed grass-fed beef, and dry aged to relax the muscles for absolute tenderness, this cut is perfect paired with one of our dry rubs or glazes, and cooked long & slow until tender. This impressive cut is sure to wow your guests at your next BBQ with it's rich, beefy and smoky flavour.

How to cook The Ultimate chuck eye roll

The ultimate chuck eye roll can be cooked in 2 ways - slow roasting the meat or indirectly on the BBQ. To slow roast the beef, unpack it and let it come down to room temperature. Pre heat the oven and place the meat on the oven tray uncovered for 5 hours. Once done, wrap it in a foil and let it roast for another 3 hours. Check if the meat is tender, then remove from the oven and let it cool for about an hour before shredding it.

To cook it on the BBQ, pre heat the grill and place a water filled drip pan on it. Place the meat directly on the drip and let it smoke for about 5 hours. Cover the meat with foil and cook for another 3 hours. Check if the meat has cooked and then get it off the grill. Let it cool for about 30 minutes before cutting.

Chuck Eye Roll

Cut from the chuck/shoulder blade and rolled neatly by our master butchers, this impressive joint is well suited to long & slow roasting. Consisting of a large muscle mass divided into two parts, the upper (leaner) part, and the lower (slightly fattier) part. This is a good value cut that offers a strong buttery flavour and natural tenderness, serving up to 10-12 people.

We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
