I had the best ever pork skewers while on a jungle trek in Thailand they were cooked over an open fire. This is a perfect summer BBQ recipe.
Method
Blitz the coriander stems, white pepper, cumin seeds, garlic,
turmeric and sugar in a blender until it forms a paste. Don't blend
too much it's preferable if a little lumpy.
Mix in the fish sauce and coconut milk.
Cover the skewers with the marinade and refrigerate for 2 - 4
hours.
Take them out for half an hour before cooking; barbecue for 10
minutes until the meat is white throughout.
Tip: Pre-marinade the chicken in coconut milk
for a more distinctive flavour.
