Add the mushrooms to the pan and cook for around 6 minutes, or until they have turned golden. Once they are cooked add in the Marsala wine and allow to simmer until the Marsala has reduced to around 1 tablespoon. Once the Marsala wine has reduced add in the cream. Bring to the boil and then simmer until the sauce has thickened. Add in the crumbled stilton and stir until melted. Transfer the steak to plates and serve the sauce over the steaks.
