Ingredients

  • 1 x red cabbage finely shredded
  • 1 x red onions thinly sliced
  • 1 x Granny Smith apple diced
  • 125g butter
  • 3/8liter red wine
  • 125ml red wine vinegar
  • 75ml port
  • Juice and zest 2 oranges
  • 150g sugar
  • 1tbsp Mixed spice
  • 125g golden raisins

Introduction

The ideal accompaniment for any roast dinner or Christmas feast.

Method

  1. Place all in heavy bottomed pan except half the butter.
  2. Cover with lid and cook till tender.
  3. Remove lid and reduce liquid till glossy and rich.
  4. Fold in cold diced butter.
