Ingredients
- 375g Rare breed pork loin steak, thinly sliced
- 100g Mange tout
- 2 x Medium red chillies, deseeded and thinly sliced
- Zest and juice of a lemon
- 2 x Small onion, finely chopped
- Salt and pepper
- 2 Teaspoons of sesame seeds
- Olive oil for cooking
- Sesame oil
- Knob of butter
Introduction
Tangy, spicy but delicate with a fresh crisp crunch. Quick and easy to make.Method
- Precook the mangetout by plunging the vegetables in boiling water for 1 minute, drain and leave to one side.
- Heat a dry wok, add the sesame seeds and toast until golden brown, spoon the seeds into a bowl and leave to one side.
- Add a splash of oil to the wok and fry the shallots, chilli and lemon zest over a medium heat for a few minutes until the shallots start to soften.
- Season the pork with the salt and pepper.
- Increase the heat in the pan, add the pork and fry for a few minutes until the pork is golden brown.
- Stir in the mangetout, sesame seeds, butter and lemon juice.
- Serve with a little trickle of sesame oil.
