- 400g Italian sausage skins removed
- 4 tbsp olive oil
- 1 red onion finely diced
- 1 stick celery finely diced
- 1 red pepper, seeds removed, finely diced
- 400g finely chopped tinned tomatoes
- 1 tbsp tomato puree
- Sea salt & chilli flakes to taste
- Freshly grated Parmesan
- Fresh basil roughly cut to serve
- 300g Rigatoni or pasta of your choice
Introduction
Our take on a classic Italian dish, super simple and versatile, feel free to use whichever sausage you have to hand!Method
 
                    Heat the oil in a large frying pan & add the onion, celery & pepper then cook over medium heat until soft, this will take around 5 minutes.
Add the sausages to the pan, break up the meat with a wooden spoon & cook until the meat is browned, add the tomatoes & cook for 10 minutes.
Meanwhile, cook the pasta in a pan of boiling salted water according to the packet instructions.
Drain the pasta & stir in the sauce & mix through.
Divide into serving bowls topped with grated Parmesan & chopped basil.
