In a large bowl, combine the oil, brown sugar, garlic powder,
salt and Szechuan pepper.
Add the pork belly pieces to the oil mixture, covering each
piece.
Lay the pork belly pieces in a single layer in the basket of
your air fryer and cook the pork belly cubes for 10 minutes, then
add the shitake mushrooms and continue to cook for another 8 to 10
minutes shaking everything a couple of times whilst cooking.
Remove onto a warm serving bowl and scatter with chopped
chives.

Wok fried chinese greens, sticky rice and Sriracha mayo.
