Ingredients
- For the Pork:
- 2 x 200g Pork Loin Steaks
- 2 tsp. sesame oil
- 2 heads Pak Choi, trimmed
- 1 tsp. sesame seeds lightly toasted
- 1 clove garlic grated
- 1 thumb size piece ginger peeled & finely grated
- For the Miso Dressing:
- 2 tbsp. Red miso paste
- 1 tbsp. Shoexing rice wine
- 2 tbsp. yuzu juice (or 1 tbsp. each lime & tangerine juice)
- 1 tbsp. pure honey
- 1 tsp. English mustard
Method
1. Mix the ingredients for the marinade/dressing together in a small bowl. Liberally brush each piece of pork all over with the marinade keeping half the dressing to one side to serve.
2. Heat a griddle or frying pan over medium high heat, add 1 tsp. sesame oil and cook the pork for 5 mins each side, careful not to burn the meat but creating a rich dark glaze until firm to touch and cooked through.
3. Meanwhile, blanch the Pak Choi for 1 minute in the boiling salted water, then drain. Heat the remaining oil in the same pan then add the Pak Choi, sesame seeds, garlic, ginger and sauté for 1 minute.
4. Serve the chops with the Pak Choi and an extra drizzle of dressing.
