Method
Remove your pigs in blankets out of the packaging and pat dry
any moisture.
Gently heat your heavy based non-stick frying pan, don't get it
too hot otherwise the bacon will
start to burn, we just want to start the cooking process by
rendering a little fat and giving a light caramelisation.
Brush the non-stick frying pan with the finest film of
oil.
Don't overcrowd the cooking base, the sausages
must sit flat and have enough room to turn over.
Cook over a medium heat turning regularly until they reach a
light golden colour, around 3-4 minutes.
Next, simply pop on a roasting tray preferably around your
roast and cook for another 6-8 minutes until rich and
caramelised.
The sausages will become more firm as they cook, gently press
with your thumb, the more spring back you get the hotter the
protein cells have expanded which means the more well done your
sausages will be.
Serving suggestion
Serve with roast
turkey, goose or
cockerel with traditional winter vegetables and cranberry sauce, or
simply enjoy as a snack over the festive period.
