Parsley & lemon crumb method Finely zest the lemon. Blitz the garlic and parsley together. Add the lemon zest. Season with sea salt flakes and freshly ground black pepper. Charred pork rib eye method Remember, after removing your steaks from the packaging, pat dry and bring to room temperature. Preheat your griddle or heavy based frying pan until it sizzles when you add a drop of oil. Massage a little duck fat into the steak, then season with salt and pepper. Cook over high heat turning the steak only once, until rich in colour, then reduce heat to medium. Cook for 4 to 5 minutes on each side until firm to touch . Finish by adding a small knob of butter and baste the meat with the foaming butter for a minute or two. Leave to rest in a warm place for 4 to 5 minutes before serving.
