The Christmas period is over but keep festive spirits high in the New Year with this quick and delicious recipe.
Method
Method for Burgers
Heat a heavy based non-stick frying pan over medium-heat. Split
and toast the brioche buns until nice and golden, about 1 to 2
minutes, being careful, as they will burn quickly.
Remove & keep warm.For the turkey burgers gently rub a
little oil or fat onto both sides.
Bring the frying pan to a medium heat then fry the patties, 5
to 6 minutes per side, until fully cooked through. In the last
minute of cooking add the butter & baste over the burgers, this
will make them extra rich & juicy.
Method for Spiced Red Cabbage
Place all the ingredients in a heavy bottomed pan except half
the butter.
Cover the mixture with a lid and cook until tender, around 1
hour.
Remove the lid and reduce the liquid until glossy and rich,
then fold in the cold, diced butter.

Spoon a little red cabbage onto the base of the toasted
