Best served with roasted game birds, guinea, hen or a tasty free-range chicken
Method
Wrap chicory in bacon covering as much surface area as
possible.
Heat a non stick pan and brown evenly all the sides.
Transfer to a roasting tray/ casserole dish.
Mix together maple, oil and Madeira then pour over chicory add
diced butter and thyme.
Bake in preheated oven 135°C for approximately 40 minutes.
Take out chicory carefully then boil juices down to a syrupy
consistency ,then pour back over the chicory - finish with a few
turns of cracked black pepper.
