Soak 8 small wooden skewers in cold water. Place the mince into a bowl along with the garlic, coriander and cumin, salt and black pepper. Mix well and divide into 8. Press the beef around the skewer forming a sausage, ¾ the length of the skewer. Repeat with the remaining meat and skewers then place in the fridge to set. Heat a griddle pan until hot, add the skewers and cook for 2-3 minutes on each side. Heat a separate frying pan until hot, add the fig slices and fry on each side for 30 seconds. Remove then add the halloumi and cook on each side for 1 minute. Whisk the lemon juice, olive oil, salt and black pepper together then use a little to dress the leaves. To serve Place alternate slices of fig and halloumi onto the centre of the plate. Place a pile of the leaves on top then finish with 2 kebabs. Drizzle over a little of the remaining dressing.
