Place the wings
into a zip bag & pour over enough
chipotle marinade to liberally coat the meat. Reserve the rest
for basting the wings whilst grilling.
Seal & place in chiller,
marinade between 2 & 4 hours.
Remove the wings from the bag then rub away excess
marinade ready for grilling.
GRILLING
Prepare the grill for direct cooking over medium heat (190°c to
220°c).
Grill the wings over direct medium heat, with the lid closed,
until the meat is no longer pink at the bone, 15 to 20 minutes,
turning occasionally and watching closely to avoid over
charring.
Brush the wings with the reserved marinade during the last 5
minutes of grilling time.
Serve with a smashed avocado & burnt corn salsa dressed
with lime juice & fresh chilli.
