Graham
GrahamWaddington has been at the forefront of British
charcuterie for the last fifteen years. As co-founder of Trealy
Farm, he contributed to putting British versions of continental
meats and salami on the UK map. His passion for using native breed
animals culminated in him and his wife Ruth setting up Native
Breeds Charcuterie in Gloucestershire. Native Breeds is now an
established, small charcuterie company making a unique range of
cured, smoked, air dried and cooked charcuterie from Britain's
native and rare breed animals. Graham's raison d'être is to drive a
renaissance of artisanal traditional British cured meats and
sausages.
