Exclusive to Farmison & Co, this luxury Longhorn Beef Wellington will make for a generous meal for four people. Made with a coarse cut duxelle of mushrooms enriched with slow cooked and pulled Longhorn beef rib in a rich caramelised onion & herb gravy then carefully wrapped in air-dried ham & the flaky puff pastry, and not forgetting the all-important meltingly tender aged centre cut fillet of Longhorn breed beef.
Hand-finished, each leaf of thyme is carefully placed, resulting in an outstanding centrepiece that radiates exquisite craftsmanship for our exclusive take on the traditional beef wellington. Be sure to consult our Beef Wellington recipe below, and serve alongside our F&Co red wine sauce, not forgetting the all-important dauphinois potatoes.
This product is frozen and will defrost whilst in transit to you. Ensure this product is thoroughly defrosted before cooking. We strongly recommend baking within 48 hours for best quality. This product must not be refrozen.

About the cut
Centre Cut Fillet
An outstanding joint of prime grass fed beef, trimmed of all sinew by hand, the centre cut is one piece of pure fillet. The underworked fillet muscle of the beast makes for the most tender beef, often reserved for prime steaks in restaurants. Our centre cuts are further tenderised by the essential aging process, which enhances the natural quality of the beef, concentrating the flavour.

The Longhorn made British beef great, and its quality established our reputation as top cattle breeders with ranchers from Argentina to Australia. These easy going beasts take longer to mature than other breeds, which gives the beef both its rich seams of marbling and fine grain. This means both rich and juicy roasting joints, and neat steaks. They are still a common sight on meadows throughout our county; originating in northern England, in the counties of Lancashire, Westmorland and Yorkshire.
