Ingredients
- 500g traditional sausage meat stuffing divided into 4 equal patties
- 4 rashers smoked streaky bacon
- 2 brioche buns
- Punnet raw brussel sprouts finely shredded
- Vinaigrette (1 part sherry or wine vinegar, 1 part Dijon mustard, 3 parts olive oil, pinch sugar, splash of water to emulsify)
- A few chopped chestnuts
- Salt & cracked black pepper to taste
- Cranberry sauce
- 2 slices cheese for melting (I like to use Emmanthel)

Crafted with traditional sausage meat stuffing transformed into perfectly seasoned patties, this burger is layered with festive joy. Topped with crispy smoked streaky bacon, melted Emmental cheese, and a dollop of sweet cranberry sauce, it’s the perfect harmony of sweet and savoury.Method
To start toss the shredded sprouts in a little vinaigrette to just coat, add the chestnuts & season to taste.
Toast the buns & keep warm.
Fry the patties in a little oil with the bacon until thoroughly cooked over medium-high heat then top the patties with cheese ready to build the burger.
To Build
Spoon cranberry sauce on the base of the brioche, top with the pattie then a pile of sprouts & finally the crispy bacon.
Place the burger bun on top.
To Serve
Serve with parsnip chips & gravy for dunking.
