This sausage is our take on an Italian classic, handmade using coarse cut free-range Yorkshire pork for distinctive chunky texture and prepared into four neat bangers. Our Italian sausages are made using rich, free-range pork and a blend of fennel, red wine and black pepper for traditional Italian flavour lending itself to classic Italian dishes, or even your favourite British classics. These free-range bangers are ideal for a simple midweek supper, paired with a hearty tomato sauce or even as a pizza topping.
Let your sausages come to room temperature before cooking. Preheat the pan with a fine film of oil, though not too hot as this could cause the sausages to explode. Don't overcrowd the cooking base, and cook through on a medium heat, until rich in colour, caramelised and firm to touch. It's good to eat and enjoy meat from free range systems, showing farmers that there is a market for herds reared in an ethical manner. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this by backing free range farming and helping more people realise that we need to safeguard the variety of our farms and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
